Creating culinary excellence through new partnership

A new partnership between River Cottage and The Cornwall College Group will help chefs across the South West to develop new skills in sustainable and seasonal cooking.  The multi award winning programme, which is delivered out of River Cottage HQ in Axminster, will now be backed by the expertise of the chef lecturers at the UK’s leading catering college.

Head of Cultural and Visitor Economy across The Cornwall College Group, Miriam Venner, said: “I am delighted that we have developed this opportunity, enabling us to work with River Cottage, one of the regions leaders in food integrity, seasonal cooking and sustainability.”

Trainee chefs will spend 2 days a month at River Cottage, the rest of the time with an employer near where they live.  Applications are still open for young people interested in taking part in this year’s course and are open to candidates from Bristol to Winchester and down to Lands’ End.

Miriam continued: “The restaurant trade is one of the many professions in which apprenticeships and hands-on learning have always been key. Young cooks like apprenticeships are expected to roll up their sleeves and knuckle down from day one. They rapidly learn on the job absorbing wisdom from those around them and developing skills immediately depended on in a busy commercial environment.”

An apprenticeship is a great way to earn while you learn and by studying with River Cottage, students will understand food culture, provenance, animal welfare, sustainability, food miles and waste in every lesson.

The Cornwall College Group Director of Development, Sally Foard, added: “Anyone with a keen passion for cookery or interested in front of house service, will find an apprenticeship a great way to learn. Not only are you working in a real business, but you also benefit from expert tuition both at your place of work and in the training environment, with River Cottage this is a 100 acre organic farm. You will visit the famous Park Farm in Axminster twice a month.

“On successful completion of your apprenticeship your CV will show that you trained with River Cottage, a sure way to help make your CV stand out.”
