Catering students at Cornwall College Camborne and St Austell have been learning from one of the best chefs in the country, Nathan Outlaw. The chef, who has two Michelin Stars, has been delivering a masterclass to students along with former Cornwall College alumni Zack Hawke, who is now Head Chef of the Mariners pub in Rock.
The groups, which included apprentices from the Eden Project, took part in a fish and shellfish tutorial. The masterclass was part of Academy Nathan Outlaw, a partnership between the award winning chef and The Cornwall College Group which enables young chefs to gain work experience in one of Nathan’s restaurants, further enhancing their skills.
Team Lead for Catering at Cornwall College Camborne, Nick Batten, said, “The experience these students gain from being in Academy Nathan Outlaw is second to none. This is the only college in Cornwall where they can learn from a Michelin-starred chef and actually get to work in a Michelin-starred kitchen. Nathan brings a wealth of knowledge to the sessions and the students gain additional skills to help them in their chosen careers.”
The Academy not only benefits the students learning, but Nathan’s Head Chefs are all ex-students from Cornwall College. The Academy is open to Level 2 catering and hospitality students who have successfully completed a Level 1 course. The Academy is run in both the Camborne and St Austell campuses.
Curriculum Lead for Catering, Grant Mather, said: “We are delighted that Nathan gives up his time to invest in the next generation of Cornwall’s chefs. It’s these masterclasses that will make our students stand out to future employers and equip them to work in kitchens around the world.”
